Two Trucks LLC CEO Jon Wagner and President Dain Pool have given us a sneak peek of the menu for their new truck, Texas Burrito Co., which is slated to roll out at the end of next month.

Wagner and Pool invested about $140,000 for the new concept that will specialize in Tex-Mex, serving burritos, tacos, bowls, salads and sides.

“Dallas loves Tex-Mex,” Pool said, adding that he and Wagner had been stewing on the idea for a while. “We know we have three great brands and rolling this out from scratch – we have a lot on the line.”

Grand Prairie-based Two Trucks also owns five other trucks under the brands Gandolfo’s Deli, The Butcher’s Son and What’s Da Scoop?

Some of the items on the Texas Burrito Co. menu, which could be subject to change, include signature burritos such as the Rio Grand, which has Monterey Jack cheese, rice, black beans, sweet barbacoa pork and green chile sauce; and the Bevo, which has Monterey Jack Cheese, pinto beans, grilled steak, caramelized onions, roasted poblano peppers and grilled corn salsa. It also will have an array of tacos that include the Maverick, which has pulled green-chile chicken, pineapple-habanero salsa, diced onion, roasted poblanos and cilantro.

The truck will serve sweet pork barbacoa nachos, chips and queso and grilled corn on the cob, which will be topped with sriracha lime crema and queso fresco.

The company just completed the design of the truck, which boasts a burnt orange wrap paying homage to the University of Texas at Austin and the truck’s slogan, “Anything rolled this good should be illegal.”

The new food truck will make its debut outside of targeted office buildings, during weekend events and near bars at nights. Wagner and Pool said there are no plans just yet to take the truck to Klyde Warren Park, where the other three brands often appear.
